Simple Apple Crisp

What could be better than old fashion Apple Crisp? Simple - a quick version of apple crisp with vanilla bean ice cream on top! My husband's family was coming over for dinner and I needed some sort of easy dessert (since my dinner plans were a little more involved) - this recipe was PERFECT! Of course, my husband also loves cinnamon apples, so this took that into account as well.

INGREDIENTS

2 cans apple pie filling
1 tsp cinnamon

1 C quick oats
1 C all-purpose flour
1C brown sugar
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 C butter, melted
honey

DIRECTIONS

Combine the pie filing and 1 tsp cinnamon - spread evenly in a baking dish. In a separate bowl, combine all remaining ingredients except honey - mix well. Spread topping evenly over pie filling and drizzle with honey.

Bake at 350 for about 45 minutes. Allow to sit for about 10 minutes, then serve with vanilla ice cream.

I made this last night... Shane commented that he could eat the crust forever! Maybe it was b/c I bought store brand apple pie filling, but it wasn't impressive... They needed more of a crunch, IMO. I wonder if we could toast the apples first?

I LOVE apple pie filling, even with the softer apples. I know there are ways you can add fresh apples, or even make it with fresh apples instead. This is just as tasty with cherry pie filling too - or any other fruit pie filling I would imagine.

My friend and I were recently talking about technology, and how integrated it has become to our daily lives. Reading this post makes me think back to that debate we had, and just how inseparable from electronics we have all become.


I don't mean this in a bad way, of course! Societal concerns aside... I just hope that as the price of memory drops, the possibility of uploading our memories onto a digital medium becomes a true reality. It's a fantasy that I daydream about every once in a while.

Oh my goodness I love homemade apple crisp! This looks SO delicious. One question - what kind of apples do you use? An apple more on the tart side, or sweet side? (sorry for such a silly question) I can't wait to try this!
